To start, select a couple of your favorite cuts of chicken, my choice is thighs, but anything will work. I use a simple convection toaster oven, so I just place them on a backing sheet of foil on the grill, but you can use a baking sheet in a a regular oven if you need the room. Coat the chicken heavily in spray butter, then generously coat the chicken with your favorite Pepper King Garden mix.
Now place small slices of bacon, about 1" by 1/4" liberally on top of the chicken. The bacon drippings will dissolve the pepper mix and soak it into the chicken.
Next top the bacon with large sprigs of Rosemary, then coat the sprigs liberally with spray butter again. This will dissolve the flavor from the Rosemary into the chicken.
Bake at 350' until the bacon is fairly crispy, about a half hour. Better to go over than under. You can always throw out the chicken and eat the bacon.
Remove the dried butter roasted Rosemary and crush up and set aside for a delicious addition to each bite. It's also a great addition to your favorite sauce. This is incredible any way you use it, DO NOT throw this out.
